Tomatoes are an abundant fruit that you can find made a variety of different ways year round. What you may not have known, however, is that tomatoes are extremely beneficial for the body. They are a great source for vitamins C (alpha-tocepherol), A and K. The nutrient density obviously varies by the size of each tomato but one medium sized tomato (about a 120 gram serving) yields 20% of the daily value of vitamin A and over 25% the daily value of vitamin C and only comes in at 22 calories.

Tomatoes are also rich in a very specific antioxidant known as lycopene. Lycopene can be found in many fruits that are distinctly red in color, however tomatoes are far and away the best source for it.  On top of that, tomatoes are one of the few raw foods that do not lose a substantial amount of their nutrients through the cooking process. You can eat tomatoes raw or incorporate them, cooked, into a meal and still enjoy their long-term health benefits.

What is lycopene?
Lycopene is a powerful antioxidant that has been linked with a lower risk of prostate cancer. Scientific research is preliminary and nondefinitive, however antioxidants are known to fight free radical damage to the body’s cells. Lycopene can come from a few different sources such as watermelon or guava, but tomatoes are the most abundant source for lycopene and provide the most of this powerful antioxidant.
